Doughnuts History

Do you know where doughnuts get their name? First of all, “dough” is easy, since it means a mixture of flour, liquid, and other ingredients. Yet, why is 'nut' in 'doughnut'? In order to figure out why, you need to know something about the history of doughnuts. It is said that the doughnuts we find nowadays were a creation of a Dutch family that had immigrated to the United States. The mother, Elizabeth Gregory used to prepare fried dough for her son, a captain, and his crew before they went to sea. While frying the dough, she would put hazelnuts or walnuts in the center, where the mixture might not cook well. Therefore, it is true that the first doughnuts were made with dough and nuts. Hanson, Elizabeth's son, claimed that he was the one who came up with the idea of replacing the nuts with just a hole.

That said, fried dough had been popular since the times of ancient Greece and Rome. In Medieval times, Arab cooks started frying up small portions of unsweetened dough and dipped them in sugary syrup. Eventually, these Arab cakes spread all the way to Northern Europe and became popular. Also, Dutch settlers brought the cakes to America in the 17th century. Except that, they might not be the first fried cakes in the land of America, as archaeologists are now excavating fossilized fragments that look like fried dough in prehistoric Native American habitats.

As you can see, food items that resembled doughnuts were found in various regions around the world. This should come as no surprise, as the ingredients are rather simple: flour, yeast, eggs, and fat. After that, you can improvise and add whatever you like. Nowadays, we even have non-fried baked doughnuts that are low in calories and healthier for us.

ドーナッツの名前がどこから来たか知っていますか？「ドー」は、粉や液体やその他の材料を混ぜたものという意味なのですから簡単です。しかし、なぜ「ドーナッツ」に「ナッツ」が入っているのでしょうか。それを解き明かすには、ドーナッツの歴史を少し知る必要があります。 今日見るようなドーナッツは、アメリカに移住したオランダ人一家が生み出したと言われています。母親のエリザベス・グレゴリーは、船長である息子とそのクルーが海に乗り出す前に、揚げたドーを用意しました。エリザベスはドーを揚げるとき、火が通りにくい中央にヘーゼルナッツやクルミを入れていました。したがって、初期のドーナッツは本当にドーとナッツで作られていたのです。エリザベスの息子ハンソンは、ナッツを穴に代えるアイディアを思いついたのは自分だと言っていました。

とはいうものの、揚げたドーは古代ギリシャ・ローマの時代から人気がありました。中世にはアラブ人の料理人が、甘みを加えていない小さなドーの塊を揚げ、甘いシロップに漬けたものを作り始めました。このアラブの菓子が北ヨーロッパにまで広まり、人気を博しました。オランダ人の移民も、17世紀にアメリカにその菓子を持ち込みました。ただ、それがアメリカの地で初めての揚げ菓子ではないかもしれません。考古学者は今、アメリカ先住民の先史時代の居住地から、化石化した揚げ菓子のカケラのようなものを発掘しているのですから。

ドーナッツに似たものは、世界のさまざまなところで発見されているということですね。驚くにはあたりません。材料は小麦、イースト、卵、油脂とシンプルです。後は、その場で何でも好きなものを加えればいいのです。今日では、よりカロリーが低く健康的な、揚げていない焼いたドーナッツさえあります。
